Yoga Night Crock Pot Recipe: Split Pea Soup


INGREDIENTS:
1 1/2 cups split peas (I used a mix of green and yellow, plus red lentils)
1 onion, chopped
2 carrots, chopped
2 potatoes, chopped
1 rib of celery, chopped
6 slices of bacon, chopped
seasonings of your choice (I used garlic, salt and pepper, thyme)
4 1/2 cups water

Place all ingredients in the crock pot and cook on low for 10-12 hours or high for 5-6 hours. When you get home from your busy day, mash it all up with a potato masher (or if you're really ambitious, put it in the blender), re-season to taste, and heat a few more minutes. Please, serve these with grilled cheese sandwiches.

Yum - I wish my crew would eat something so green! You are a lucky mama, and they are a lucky bunch.

You've inspired me to start a Wednesday Night Crock Pot routine...tomorrow is Greek Chicken.

I love, love, love, love split pea soup! I am so excited about finding this crock pot recipe. I am going to try it this weekeend! Lucky for me, my dh does not like it so I get it all to myself.

yummy! i love split pea soup, and how great to have a crock pot recipe. love that is has bacon in it. :) will have to try this one.
